Improves Water Quality: Boiling water in an iron kettle releases trace iron ions and adsorbs chlorine ions in the water. The boiled water is sweet and tasty, mimicking the effects of spring water, enhancing the taste of tea, and making it more mellow.
Even Heat Conduction: Compared to common stainless steel kettles like those used for quick boiling, the iron kettle conducts heat more evenly. During heating, both the bottom and sides are heated, resulting in an overall temperature increase and a higher boiling point.
Supplements Iron Elements: When water boils, the cast iron will release abundant divalent iron ions, supplementing the body's iron needs. Normally, people obtain trivalent iron from food, and the body can only absorb about four to five percent. In contrast, the body can absorb around fifteen percent of divalent iron ions.
Usage and Maintenance:
Rust Removal with Rice Water: Submerge iron kettles, pans, spatulas, and kitchen knives in concentrated rice water after use. This not only prevents rust but also removes existing rust.
Rust Removal with Alum: Pour about 1 kg of water into the iron kettle, add around 50 grams of alum, and boil for 10 minutes. Then, scrub repeatedly with a brush.
Scale Removal with Vinegar: Vinegar is a commonly used rust remover. If an iron kettle rusts, pour some vinegar into the kettle, add water, bring it to a boil, and scrub while boiling to quickly remove the rust.
Using Onion, Potato Peel, or Radish Skin: Dip the cut end of an onion, freshly peeled potato slice, or radish skin in salt and rub vigorously on rusty areas. This easily removes rust from the iron kettle. However, be cautious as residues may adhere to the surface, creating spots when grilled over an open flame, affecting aesthetics.
Regular Use: The best way to maintain the kettle is to use it every day. Since iron kettles are made of cast iron, they are prone to rust over time. This is a normal occurrence, and the maintenance after rusting is part of the kettle's care process.
